Sautee 1 onion, 1 crushed garlic clove, 1 inch piece of grated ginger and 2 inch piece of turmeric (or 2 teaspoons of turmeric powder)
Add in 1 tsp of red curry paste, 1/2 bouillon cube.
Add in;
8 carrots, chopped
1 whole cauliflower head, chopped
1 sweet potato, diced
Top with 8 cups of water. bring to a boil and simmer for 1 hour.
blend.
Top with roasted chickpeas and chopped parsley or cilantro.
