What the world needs now is more dinner platters! Or at least that's one thing stressed out parents can prepare to make dinner a little easier. When it feels like we are constantly in the kitchen and the days are endless, break one of these platters out and watch the mood change instantly. Older kids can help put them together or better yet, make them for you. They are also a great way to get some fresh veggies and fruit into your family. Put one of these babies out and watch it disappear in a matter of minutes.

Veggie Platter You can add anything to this platter; cheese, hummus, crackers, veggies, olives… the possibilities are endless.
Vegetarian Rainbow Rolls So delicious! You can also make a sweet chili sauce to go with these. Soak rice paper in a flat pan until soft (30 sec.) and then roll in whatever you have in your fridge; rice, grated carrot, mango, avocado, sprouts, tofu.. it's all good.
