Snack Time! Strawberry Muffins


Today’s healthy snack, strawberry muffins!

1 cup nut milk (cashew or almond work well)

1 tbsp apple cider

1 tsp vanilla

3 tbsp coconut oil

Mix the above. I whisked on low heat to melt the oil.

I then added 1 flax egg

In a separate bowl mix; 2 cup spelt flour, 1/2 tsp salt, 2 tsp baking powder, 1/2 cup coconut sugar.

Mix wet into dry. Fold in 1 cup chopped strawberries and handful of chocolate chips.

Bake 350F for 18-20 min.

Enjoy.
